Artisanship is at the heart of our business. Years of experience in the sector allows us to select the absolute best quality of products in our region. We control the process from the selection of Iberian Pigs roaming the La dehesa, to the selection of only the best of those hams that have been cured correctly and naturally over time, until they reach our installations, for storage and dispatch.
Our international travels over the years have highlighted how difficult it is for clients in Europe, the UK or China, who have visited Spain and enjoyed the magic of “Pata Negra” during their holidays to find the same quality at home. Often the default choice is an established brand at frankly exorbitant prices. Our hams come from exactly the same source that many of these leading brands source in Salamanca and we sell our brand selectively in some of the most demanding restaurants in Andalucia, who prefer the quality of our hams to established competitors.

We think it is fundamentally unfair that the same ham is priced by competing brands at different prices in different countries, because the consumer in those countries have higher purchasing power, or that packets of hand-sliced ham are packaged in 70 gram packs as opposed to 100 gram packs to extract further margin.
All of these products are one unique price for delivery at home wherever you live within our delivery zones, with the only variant being shipping costs that we cannot control.

After hundreds of years of breeding we have reached a point where the Iberian Pig is genetically unique, with a texture and aroma and taste that many gourmets consider Iberian ham, the finest ham in the World
Like the importance of terroir in the production of fine wines, “La Dehesa” a unique biosphere of natural mediterranean cork and oak forest that stretches from Salamanca in the North down to Extremadura and Cordoba in the South is fundamental to the production of Jamon Iberico.
During “La Montanera” a period between October and March every year, the Iberian Pig is moved from eating natural grain in pens and allowed to roam freely in “La Dehesa” feeding on fresh grass and acorns (bellotta) from Oak trees. The Pigs that start the period averaging 75-80 kilos gorge on the acorns eating an average of 10 kilos a day. By the end of feeding, they have increased their weight to 180 kilos in an entirely organic way. The category Jamon Iberico de Bellota or “Iberian acorn-fed” ham comes from this process when applied to a classified Iberian Pig.
Message from the founder
We are a family business with more than a century of experience, located in Guijuelo, Salamanca. Perhaps a journey down my personal history will help you understand in my own words what the culture of the “Iberian pig” means to me.
In my land growing up, things were never easy, its people are seasoned in farm work, in handling country horses, in raising the brave bull, cows and of course the good pig, fed with the naturally grown cereal our land gives and supplemented with the acorns provided by the precious oak trees of our forests in La Dehesa.
Since we were little when the month of October arrived, the Iberian pigs were sent into the mountains, (“La Montanera”) to finish off their feeding with natural acorns, from the hand of a man (el Porquero) who beat the oak trees so that the acorns would fall to the ground, so the pigs could eat them in abundance. I have an indelible memory in my head as a 12 year old boy, when the month of June arrived, and classes ended at school, we were then required to “help at home”. One of my first tasks was to take “lunch” to our field workers with my bicycle. The women in the village would oversee the preparation of the sausages, while the men had the hardest jobs: Choosing the meat well, removing the excess fat and thus obtaining the different noble pieces of meat that the Iberian pig has. We were initiated in this tradition from youth in this work with continuous reprimands: "do it well and ensure that it is well chosen"
After six months, the sausage was already well cured and they were transferred from poles to a semi-underground cellar so that its curing would cease. The hams once salted and covered in lard and hung up on ropes however needed continual pampering to protect and prolong the curing process, because a good ham can take anywhere from 2 to 5 years to cure properly. Daily surveillance employed many techniques, if a rainy season came, charcoal braziers were put in to combat excess humidity, if frost appeared, in the morning the windows would be opened to let in the sun, numerous tricks were employed to permit a long and natural curing process. Fortunately the climate of our land in Guijelo, means that we do not have to salt our hams excessively, achieving, in comparison with other areas of Spain, a sweeter and less salty ham.
So we belong to a land where, through history and by tradition, its people have dedicated themselves to making Iberian pork products and "CURED HAM for hundreds of years. Although we are now called ham “manufacturers”, it is a product that is not manufactured, as if they were metal screws. Producing cured Iberian ham follows ancestral processes that have been transmitted from generation to generation.
However, with mass production demanded by large supermarket chains, some factories are run, in many cases by foreigners, who do not know or have any respect for the tradition of good quality. In these gigantic factories these Iberian pork products are no longer made, but are manufactured “en masse”, generating “performance pigs” through the use of low-quality feed, and artificial dryers to accelerate curing, machine cutting for the production of cheap ham products for sale to supermarkets.
Our case is fundamentally different, we strive to choose the best specimens of our beloved Iberian Pig, and control the process from the pasture until they reach our facilities in Guijelo, where 100% natural and slow-curing combined with tradition and experience over many generations makes our product GRAN DUCADO a reference of excellent quality, while we aim to priced competitively, our benchmark is and must always be quality.

01. What am I Buying?
We provide detailed information, specifications and photos on the specific products you are purchasing. We do not compromise on quality, we supply leading Spanish restaurants in Andalucia, who are highly demanding on quality and we supply the same product online. All product deliveries are selected for quality, and then checked by our warehouse team before dispatch, to ensure no damage to packaging and compliance with all regulations for export.
01. What am I Buying?
We use reputable licensed shippers, one for the EU and one that is specialized for the U.K. We do not ship on-line to countries out of these regions.
Our product prices are in Euros per kg for all products across all markets including the UK, UK prices are translated at the average exchange rate of the prior month. After you have browsed and selected the required products and added them to your basket, a purchase order including the shipping costs for your region will be calculated. Your purchase will be confirmed after payment and a paid invoice will be delivered by email.. You will receive your order within 5 working days of dispatch.

In the event you require priority delivery by a specific date please contact us by email for a quotation.
Working days exclude Saturday, Sunday and all public holidays. Orders received after 1 pm will be dispatched the following available working day.
A signature will be required on receipt of goods.Orders will only be delivered to the address stated on your order. We will not deliver to PO Boxes, or forwarding addresses due to the risk of fraude. This is for the protection of our clients. Gran Ducado cannot be held responsible for inaccuracies provided to us, or for giving authorisations for goods to be left in a safe place with our courier.
In rare circumstances we may not be able to fulfill your order. While we use all reasonable endeavors to meet the timescales indicated, we may at times experience delays due to circumstances beyond our control and we therefore cannot accept any liability for delays or non-delivery
04. Delivery notification
Our courier service operates a notification service using e-mail or SMS for all orders. This is designed to provide visibility and allow you to plan for receipt of goods. We require a mobile telephone number and an email address when you place an order. Our courier providers will send you a notification email or email the day of despatch advising that your package will be delivered the following day, providing an option to reschedule to opt for delivery to an alternative day.
05. Spoilt Goods
We cannot accept responsibility for spoiled goods. If you decide to change delivery date for orders that contain chilled and frozen products once you have received our shipping confirmation and a notification SMS or e-mail by our courier service.
06. Missed Delivery
Our courier will leave a card explaining they have attempted to deliver your goods. The card will show the contact telephone number for the nearest local delivery depot and the tracking number for the goods. You will need to contact that number to arrange re-delivery of your goods. Your parcel may be returned to us if you have not contacted us within 5 working days of the first attempted delivery. We cannot refund or replace items when our couriers have attempted delivery.

Inevitably, there will always be a small number of cases when something goes wrong. Orders get delayed and products get damaged in transit. We will always do our best to address your issue and try and resolve the problem as quickly as possible. Please email us with the purchase order reference and the issue in question and we aim to respond to you as quickly as possible.
Our aim is quality and service. If for any reason any of our products do not reach you in good condition, we will do our best to replace or refund the items concerned.
